Potato Kofta with Ground Meat Recipe

Ingredients:

  • 2 large potatoes, peeled and grated
  • 1/2 kg ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Prepare the Potatoes:

    • Squeeze the grated potatoes to remove excess moisture.
    • In a bowl, mix the grated potatoes with half of the chopped onions, one minced garlic clove, salt, and pepper.
  2. Prepare the Meat Mixture:

    • In another bowl, combine the ground meat with the remaining onions, garlic, parsley, cumin, paprika, salt, and pepper.
    • Mix well until all the ingredients are evenly distributed.
  3. Form the Koftas:

    • Take a small amount of the potato mixture and flatten it in your hand.
    • Place a spoonful of the meat mixture in the center and carefully wrap the potato around it, forming an oval-shaped kofta.
    • Repeat this process until all the mixture is used.
  4. Cook the Koftas:

    • Heat oil in a frying pan over medium heat.
    • Fry the koftas until they are golden brown on all sides, which should take about 3-4 minutes per side.
    • Once cooked, place them on paper towels to drain any excess oil.
  5. Serve:

    • Serve the potato koftas hot with a side of tahini sauce or your favorite dip.
    • Garnish with extra chopped parsley if desired.
