Cubed Potato Casserole with Ground Beef and Mozzarella 

Indulge in the comforting flavors of the Middle East with this hearty and delicious cubed potato casserole. Layered with savory ground beef and melted mozzarella, it’s a dish that promises to satisfy your cravings and warm your soul.

Ingredients:

  • 750g medium-sized potatoes, peeled and cut into cubes
  • 1kg ground beef
  • 200g onions, thinly sliced
  • 100g leeks, thinly sliced
  • 15ml olive oil
  • 50g butter
  • 250ml beef broth
  • 10g minced garlic
  • 5g dried thyme
  • Fresh parsley, chopped for garnish
  • 75g cooking cream
  • Salt and black pepper to taste
  • Mozzarella cheese, shredded

Instructions:

  1. Preheat the oven to 180°C (356°F).
  2. In a pan, melt half the butter over low heat, add the onions and leeks, and sauté for 5 minutes. Set aside.
  3. Add olive oil to the pan, then brown the ground beef over medium heat. Remove and set aside.
  4. In the same pan, add the remaining butter, garlic, and thyme, then return the beef and sauté for another minute.
  5. Grease a casserole dish with a bit of butter, and layer half of the potato cubes at the bottom.
  6. Spread the browned beef, onion, and leek mixture over the potatoes, then cover with the remaining potato cubes.
  7. Pour the beef broth over the layered beef and potatoes.
  8. Cover the casserole with foil and bake in the oven for 2 hours.
  9. Remove the foil, spread the cooking cream over the top, and continue baking for another 30 minutes or until the surface is golden brown.
  10. Take the casserole out of the oven, sprinkle with fresh parsley and shredded mozzarella cheese, and serve hot.
