Ingredients:

  • 3 large eggplants.
  • 1/2 kilogram of ground beef.
  • 3 tablespoons of corn oil.
  • 1 large onion, finely chopped.
  • 4 cloves of garlic, minced.
  • 4 peeled and chopped tomatoes.
  • 2 tablespoons of tomato paste.
  • 1 tablespoon of salt.
  • 1/4 teaspoon of black pepper.
  • 1 teaspoon of mixed spices.
  • 1 medium-sized green, red, and yellow bell pepper, chopped into cubes.
  • 2 cups of water.
  • Oil for frying the eggplant.

Preparation:

  1. Peel the eggplants and cut them into cubes, then fry them in hot oil until golden brown.
  2. In another pan, fry the ground beef with onions and garlic until the meat is cooked.
  3. Add the tomatoes, tomato paste, salt, black pepper, spices, and chopped bell peppers.
  4. Pour boiling water and let the mixture cook for 10 minutes.
  5. In an oven dish, place a layer of eggplant, then a layer of the meat mixture, and repeat the process.
  6. Cover the dish with aluminum foil and bake in the oven for 20 minutes.
  7. Remove the aluminum foil and return the dish to the oven for another 10 minutes until the surface is golden brown.
