Here’s a simple and flavorful chicken curry recipe :
Ingredients:
- 4 large chicken breast fillets, cut into large cubes
- 2 tablespoons of chopped fresh cilantro
- 1 tablespoon of minced ginger
- 4 cloves of garlic, minced
- 1 large onion, finely chopped
- 2 large tomatoes, peeled and chopped
- 2 tablespoons of tomato paste
- 1/2 cup of heavy cream
- 1/2 teaspoon of paprika
- 1/2 teaspoon of crushed red pepper flakes
- 1/2 teaspoon of cumin
- 1/2 teaspoon of turmeric
- 1 teaspoon of curry powder
- 1/4 teaspoon of black pepper
- Salt to taste
- 4 tablespoons of oil
- Cooked basmati rice for serving
Instructions:
- Heat the oil in a pot over high heat.
- Add the chopped onion and sauté until it becomes translucent and golden.
- Add the chicken cubes and sauté until they are nicely golden.
- Add the minced garlic and ginger and stir until aromatic.
- Add the chopped tomatoes, tomato paste, paprika, red pepper flakes, cilantro, cumin, turmeric, curry powder, black pepper, and salt. Stir well and cook on high heat for 3-4 minutes.
- Add the heavy cream and chopped cilantro, and stir until the ingredients are well combined.
- Cover the pot and let the chicken simmer on low heat for 5-7 minutes until the chicken is fully cooked and the sauce thickens.
- Serve the chicken curry with cooked basmati rice1.
